May Day



Happy May Day!

Streams of light danced through our screens to welcome this first day of May. Early risers woke in anticipation of the delivery of May Day “baskets” to our neighbors here on center. Kylah and I eagerly set to work making Spanish Coffeecake to fill our floral wrapped gifts of joy. The kids had grand plans to deliver their baskets secretly, but were too excited about seeing the faces of those whom they were blessing.






Enjoy this recipe from my much loved and well used MacArthur Park Church of God cookbook. It is filled with wonderful recipes but, more than that, brings back sweet treasured memories from my wonderful Church family during my growing up years.



Spanish Coffeecake

Recipe by Ima Jean Fife

2 ½ cups flour
1 c. brown sugar
¾ c. white sugar
1 tsp. cinnamon
½ tsp. salt
¾ c. vegetable oil

Mix above, remove ½ cup for topping; add 1 tsp. baking soda, 1 tsp. baking powder, 1 egg, 1 cup buttermilk *(I fill a one-cup measuring cup with 1 TBSP white vinegar and then fill up with milk.); beat 2 minutes. Pour in 9 x 13 pan, sprinkle on the topping and bake at 350 for 30-40 minutes.

i'm glad we had ours in april,as pilots do not celebrate "mayday".
